Jamming Down the Pedal Like He's Never

Blogger's back up after a lengthy outage. Yesterday's posts and a bunch of comments seem to have evaporated. Jill may or may not be able to restore them later.

As a token of our esteem, we present this picture of a delicious egg salad sandwich. When was the last time you had one of those?



We'll be thinking the funny thoughts again presently, we promise!

I often have egg salad for breakfast. 2 hard-cooked eggs from the company cafetaria, a packet of Hellmann's light, and a dab of mustard...on a slice of just-baked flaxseed bread. Dee-lish.

I make a very mean egg salad, though that is a picture I appropriated.

Egg Salad

Three eggs boiled hard but not green: diced
Some mayonnaise. How much? Enough
Chopped celery.
Salt
Pepper
Half teaspoon dry mustard
Herbs, preferably fresh but dry will do in a pinch: basil, parsley, dill, cilantro
cumin, annatto powder, pimiento

In a large enough bowl, mix eggs, celery, mayonnaise, mustard, salt and pepper. Drop in your herbs and spices. TASTE IT. Is it good? Yes? Put on toast with lettuce and/or sliced tomato.
Does it need something? How about capers? Tiny hunks of soft cheese? Bacon bits? Minced prosciutto? Diced orange pepper?
Now is it good? Good. Eat that!
